Rolls in morel sauce
Grandma's rolls with morels are beef rolls very popular with meat lovers. The secret of this homemade recipe is the morel sauce accompanied by fettuccine. try also this skyr cake with blueberries recipe too.
Ingredients

8 slices of beef of approx. 80 g each
20 g of dried morels
1 small leek
1½ tablespoons of grainy mustard
8 slices of cooked ham
pepper
salt
2 tablespoons of HOLL rapeseed oil
3 shallots
1 teaspoon of tomato paste
1 dl of white wine
1.5 dl of beef stock
2 tablespoons of soy sauce

Ask the butcher to beat the thin slices of beef. Soak the morels in cold water for 20 minutes. Drain them, rinse them and halve them according to the size. Separate the leek leaves and blanch them for 1 minute. Drain and dry them.
Place the slices of meat on the work surface. Brush them on one side with mustard. Cover them with the ham. Roll up the meat, wrap each roll in a leek leaf and secure with a toothpick. Season with a little salt and pepper.
Brown the rolls in oil. Halve the shallots, add them together with the morels and fry briefly. Add the tomato paste. Add the wine and the base. Cook the covered rolls for approx. 40 minutes.
